Strawberry Stuffed French Toast

Strawberry-Sstuffed French toast is the perfect way to make your loved ones feel special and appreciated. With its creamy filling, fresh strawberries and golden-brown brioche, this breakfast is exceptional any time of the year, but especially when you want to show a little extra love.

Ingredients

  • 8 ounces cream cheese
  • 2 tablespoons maple syrup
  • ¼ cup diced strawberries (plus more for serving)
  • 12 slices brioche bread (one loaf)
  • 1 cup milk
  • 4 eggs
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 3 tablespoons butter

Directions 

  1. In a medium bowl, mix the cream cheese with the maple syrup and diced strawberries. Set aside.
  2. In a large shallow bowl, whisk together the milk, eggs, vanilla extract, cinnamon and salt.
  3. Spread the cream cheese mixture evenly on six slices of the brioche. Seal with the remaining six slices to form sandwiches.
  4. Heat a medium non-stick skillet over medium heat and add ½ tablespoon of butter to the skillet.
  5. Dip each stuffed brioche sandwich into the egg and milk mixture, ensuring both sides are well coated in the batter.
  6. Place the coated sandwiches in the skillet and cook for 3-4 minutes on one side until golden brown. Flip and cook for an additional 3-4 minutes on the other side. Repeat with the remaining sandwiches, adding butter as needed.
  7. Remove from the skillet and serve warm with extra strawberries, maple syrup and a sprinkle of powdered sugar, if desired.
