Easy Beef and Broccoli Recipe

Who needs takeout when you can make something even better at home? Whether you’re cooking for a weeknight dinner or meal prepping for the week, this quick and easy stir-fry is perfect for just you or the whole family.

Serve yours over fluffy jasmine rice, topping with crunchy bean sprouts and green onions to make a restaurant-quality meal in your own kitchen.

Ingredients

  • 1 lb flank steak, sliced thinly against the grain
  • ¼ cup soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp rice wine vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 2 tbsp avocado oil (or any oil)
  • 1 head broccoli, cut into florets
  • salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 tbsp fresh chili pepper, minced
  • 2 cups jasmine rice, washed
  • bean sprouts to garnish
  • green onions, sliced to garnish

Directions 

  1. Add rice, water and salt to a small pot or rice cooker and cook according to the instructions for the rice.
  2. In a small bowl, mix the soy sauce, rice wine vinegar, oyster sauce, sesame oil and cornstarch until the cornstarch dissolves. Set aside.
  3. Bring a large pot of water to a boil. Add the broccoli florets and cook for about 2 to 3 minutes or until bright green and tender. Do not overcook. Drain and rinse immediately with cold water.
  4. Heat a large skillet on high heat. Add 1 tbsp of avocado oil and then the beef. Season with salt and pepper and sear on both sides until browned, about 2 minutes per side. Once ready, remove the steak from the heat and set aside.
  5. In the same pan, turn the heat down to medium. Add the remaining oil, followed by the garlic, ginger and chili. Stir until fragrant, but watch carefully so you don’t burn the garlic.
  6. Add broccoli back into the pan and continue to stir for another two minutes until tender.
  7. Add the beef back to the pan and then the sauce. Continue to stir until the sauce begins to thicken and coats everything evenly.
  8. Remove from heat and serve with jasmine rice, topping with bean sprouts and green onions.
