- 1 thumb-sized piece of ginger, grated
- 2 tbsp green onions, diced
- 2 tbsp gochujang paste
- 3 tbsp rice vinegar
- 2 tbsp soy sauce
- 1 lime, juiced
- 1 tbsp honey
- 1 tbsp sesame seed oil
- 1 tbsp chili crisp
- 4 cups vegetable stock
- ¾ cup coconut milk
- 2 tbsp miso paste
- Salt and pepper to taste
- 1 pack of your favorite ramen noodles
Toppings
- ½ lb shaved beef
- 1 boiled egg
- 1 head of bok choy, chopped
- 1 tbsp finger chilis
- Lime wedges
- Additional chili crisp
Instructions
- Heat your propane range to medium-high and place a large sauce pot on top. Add olive oil, garlic, ginger, chilis and green onions — sauté until fragrant.
- Stir in gochujang, rice vinegar, soy sauce, lime juice and honey. Let the mixture bubble and thicken slightly.
- Add sesame seed oil, chili crisp, vegetable stock, coconut milk and miso paste. Break down the miso with a spatula and season to taste. Simmer for 15–20 minutes to allow the flavors to fully develop.
- Cook the ramen noodles separately according to package instructions. Place them in bowls and top with shaved beef.
- Pour the hot broth over the beef and noodles.
- Garnish with bok choy, a soft or hard-boiled egg, extra chilis, green onions and a final drizzle of chili crisp. Serve with lime wedges for a bright finish.
